Blueberry Pancakes
from scratch

Ingredients:
1 cup unbleached white flour
1/2 cup whole wheat flour
3 1/2 teaspoons baking powder
----
3 tablespoons margarine
1 teaspoon vanilla
1 egg
1 1/2 cups + 2 tablespoons skim milk
1 cup blueberries fresh or frozen

Preparation:
Mix dry ingredients in large bowl
Mix melted margarine and other wet
ingredients in small bowl
Pour wet mixture into dry and beat with
wooden spoon no more than 50 times.
Fold in blueberries.

Drop on a hot, oiled griddle and turn
when edges firm up.
